Antigonon leptopus, or Coral Vine, is a native of Mexico. Also known as Mexican creeper, it is a fast growing, evergreen vine. Its flowers, tubers, are edible. One may think it to be only a decorative flowering climber, its heart-shaped leaves and delicate pink or white flowers being reason enough to allow it to grow riotously over fences and climb any post. In Thailand, however, the leaves and flowers are dipped in flour, fried and served with vermicelli. The flowers are also mixed into omelet.
